Nobu has opened its first Maui location at Grand Wailea, A Waldorf Astoria Resort, following the property’s $350 million transformation. “It’s a perfect synergy between the unparalleled luxury of Grand Wailea and the culinary experience that made Nobu a global phenomenon,” says JP Oliver, Area Managing Director, Grand Wailea, “offering an extraordinary world-class destination for impeccable food and service.”
The 13,000-square-foot oceanfront restaurant, designed by the Rockwell Group, blends Nobu’s signature style with Maui’s natural beauty—teak furnishings, organic lines, and serene hues of blue and green. Landscaping manager Jim Heid surrounded the space with more than 600 native species, creating a lush, open-air setting along Wailea’s shoreline.
In the kitchen, Executive Chef Kyle Marston, a protégé of Chef Nobu Matsuhisa, curates a menu that celebrates Nobu favorites and Maui’s unique flavors. Diners can indulge in iconic dishes like Black Cod with Miso and Yellowtail Jalapeño while discovering Maui exclusives such as line-caught fish with black bean sauce. The finale is equally unforgettable, including a tres leches cake infused with Kona Coffee and a pavlova scented with Laie Vanilla “At Nobu, inventive cuisine and unparalleled service are at the heart of everything we do,” says Chef Nobu. “We are thrilled to introduce Nobu’s signature style to Maui alongside a curation of dessert menu items that will be exclusive to the resort.
